Recipe is for a two-layer cake. Picture is a four layer- simply double the ingredients.
2 Egg whites
2/3 cup Applesauce, unsweetened
1/2 tsp Baking soda
1/4 cup Cocoa powder
1/2 cup Flour
3/4 cup Sugar
1 tsp Vanilla
8-16 oz Maraschino Cherries (strained and dried)
1 piece of chocolate (just used for shavings, optional)
Fat Free Icing
1 (32 ounce) container fat free vanilla yogurt
1 (8 ounce) container fat free Cool Whip
1 (3.4 ounce) box dry instant vanilla pudding mix- Cheesecake is pretty amazing too!
In a large bowl, mix together vanilla yogurt, Cool Whip, and pudding mix until completely combined and you see no more lumps.
Preheat oven to 350°F.
Line a round baking pan with parchment paper
Combine the ingredients in a large mixing bowl, blend well. Fold in Maraschino Cherries careful not to crush them. Pour batter into pans and bake 20-30 (15 minutes have been perfect for me) minutes until cooked. To test if batter is cooked, insert a toothpick. If it comes out clean, cake is cooked.
Remove from oven and let cool.
Once the cakes are cool. Carefully cut them half.
Add fat free icing to each layer, around and on top on the cake.
Garnish with Maraschino Cherries and chocolate shavings (optional)
Keep refrigerated till ready to serve.
